When I had my own day home I baked a lot for the kids that I cared for and with all that baking, came recipe hunting.
I stumbled across a delicious sugar cookie recipe that I use so many times a year. It is simple and makes soft sugar cookies that melt in your mouth.
I have been asked for this recipe 4 times in the last week, so I thought it is time I wrote a post since I don’t have a digital copy of the recipe or how I make them.
But before we get into the ingredients, here are some golden rules I use when making these cookies. If you don’t follow them, you definitely won’t have soft yummy cookies. 🙂
- Do not melt your butter completely, simply soften the butter so it is just starting to melt.
- Refrigerate the dough for roughly an hour before rolling it out, do not overwork the dough. If you make it too soft, stick it back in the fridge.
- I bake these cookies for 9 minutes on 350, which makes them very lightly golden on the bottom. If you make them darker, they will not be soft!
- Use parchment paper!! 🙂
Ingredients for a full batch (roughly 36 cookies):
- 1 cup of butter (I have used both unsalted or salted)
- 2 large eggs
- 2 teaspoons of vanilla
- 1 1/2 cups of granulated white sugar
- 3 1/2 cups of all purpose flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
Directions:
- Preheat oven to 350 F degrees
- Mix first 4 ingredients together until they look creamy
- Add remaining 3 dry ingredients
- Refrigerate for at least 1 hour
- Roll out dough on lightly floured surface
- Cut cookies & place on a pan that is covered with parchment paper
- Bake cookies for 9 minutes
- Enjoy! 🙂
I bake these cookies often in advance and then freeze them, taking them out before I need them to frost. It makes the texture even more “melt in your mouth like”.
